4 sweet potatoes
Taleggio cheese or brie can be used
6 large onions
splash white wine
sprinkling of dried thyme
sprigs of parsley to garnish
Put the potatoes in a preheated oven for about 30-40 mins, test with a knife to make sure the potatoes are soft and set aside.
Caramalise the onions over a low heat adding the wine and brown sugar. Make sure you cook them slowly to get the full flavor and so they are nice and brown and soft.
Cut the potatoes in half and place on a baking sheet, pile the onions on top, then add the cheese and thyme. Place under a pre-heated grill until the cheese is bubbling and begins to go brown.
Serve with the sprigs of parsley and crisp green salad.
